100% Chardonnay

Vignoble:

5 Hectares sur plusieurs parcelles, la principale étant une parcelle de vignes de 45 ans. Plusieurs lieux dits : Vieille Voye, Champlain, Petit Léchet, Bois de Milly et les Fontenilles.

Densité de plantation :

5500 pieds/ha pour 90% du parcellaire (taille guyot double),

8000 pieds/ha pour la parcelle "Bois de Milly" (taille guyot simple)

Pressurage:

Les baies sont écrasées dans un pressoir pneumatique, de type Wilmess Sigma. Puis le moût repose pendant une nuit à une température de 12 à 15°C dans de larges cuves spécialement conçues à cet effet. Le lendemain, le jus clair est pompé dans des cuves en inox thermorégulées afin d'effectuer les différentes fermentations.

Fermentation:

15 jours à 20°C en cuve inox.

Fermentation malolactique:

100%.

Elevage:

8 à 10 mois sur lies fines en cuve inox.

Embouteillage:

Mise en bouteilles sous inertage afin de préserver le caractère du vin.
