Cépage:

100% Chardonnay

Vignoble:

0,70 Ha de vignes, âge de la vigne : 50 ans, densité : 5500 pieds/ha

Exposée Sud/Est, le Chablis 1er Cru "Côte de Léchet" profite d'une belle maturité. Cette parcelle cinquantenaire donne des vins très droit, d'une concentration et d'une minéralité "hors normes". Un grand vin de garde.

Pressurage:

Les baies sont écrasées dans un pressoir pneumatique, puis le moût repose pendant 12 heures à une température de 12 à 15°C dans de larges cuves spécialement conçues à cet effet qui accélèrent la sédimentation naturelle.

Fermentation:

3 semaines à 20°C. 100% en cuve inox.

Fermentation malolactique:

100%.

Collage:

Decanter : 94 "Hint of sous bois on the nose. From 50 years old vines. Low yields but shows great restraint combined with excellent concentration. Very mineral but also has a warmth on the palate. A top example of Côte de Léchet."

Tim Atkin : 94 "The old vine concentration really shows in this wine from the youngest of the three Dampts. Earthy and mineral, with attractive leesy texture, some honey and ginger spice and a sappy, saline finish. Beautifully judged. 2017-22"
